I've only seen it once, and can't remember the title of the movie for the life of me!
It starts with this girl leaving a bar, she gets into her jeep and on her way home hits a man.
She drags him all the way home, and ends up burying him but he comes back for her.
Sound familiar to anyone?

I know the one you're talking about, and in fact, I think there might have been more than one movie with that rough plotline. I can't remember the name though.

Where's the WizardofGore? He always knows stuff like this.

Closest thing that comes to mind is the Hitchhiker portion of Creepshow 2.

When she realizes she drags him home, she just ends up killing him.
Then she buries him, he comes back, they fight and so on.
In the end she runs him over and once again drags him underneath her jeep, she goes to a garage and when the guy is fixing her jeep he finds the man underneath.
Then she just starts laughing hysterically.

Closest thing that comes to mind once again is the Hitchhiker portion of Creepshow 2.

An unfaithful businesswoman named Annie Lansing (Lois Chiles (http://en.wikipedia.org/wiki/Lois_Chiles)) gets up from bed after sleeping with her extramarital lover, realizing that she has to get home before her wealthy attorney husband to avoid suspicion. Annie hops into her Mercedes-Benz (http://en.wikipedia.org/wiki/Mercedes-Benz) and makes way for home several miles away. On the way, she accidentally kills an innocent hitchhiker (Tom Wright (http://en.wikipedia.org/wiki/Tom_Wright_%28actor%29)) as a result of her speeding down the dark road, eager to beat her husband to the house. Seeing that no one witnessed the incident, Annie takes off without much thought. Shortly after Annie takes off, the area of the incident is crowded by passersby, with many reporting the hit-and-run (http://en.wikipedia.org/wiki/Hit_and_run_%28vehicular%29) to the police.

Miles away from the scene, Annie stops along the road and begins thinking about what she has done and the consequences involved, but she ultimately concludes that no one has anything on her and thinks everything will be fine. Before she can continue, however, the hitchhiker she killed suddenly appears outside her window and utters "Thanks for the ride, lady." (A line repeated by the hitchhiker throughout the story). The frightened Annie then speeds off in terror, but everywhere she goes, the hitchhiker always reappears and becomes her tormentor throughout the trip as she repeatedly runs him over, hurls off the top of her car, slams his body into trees, etc. as he only gets more and more battered and bloody without dying. It implied that the hitchhiker was sent to Hell after his death and he is somehow back to take his revenge against Annie by trying to kill her, and take her to Hell with him. Annie eventually loses control of her car in which she drives off the road and down a hill and into a tree, knocking herself out.

She awakes a short while later, not seeing the hitchhiker anywhere in sight, believing it to be a bad dream. She gets back on the road and drives home, succeeding in getting there before her husband. As she begins to step out of her car, the hitchhiker appears from under her car, completely mangled from the trip, still uttering "Thanks for the ride, lady." The hitchhiker begins attacking her as she vainly attempts to fight him off. Later, Annie's husband finally arrives home to find his wife's dead body in her car, dead from carbon monoxide (http://en.wikipedia.org/wiki/Carbon_monoxide) poisoning caused from the still running car, with the hitchhiker's sign showing his targeted destination (reading DOVER).

For a moment there, I was thinking it might be Stuck (starring Stephen Rea and Mena Suvari), another excellent film about a guy getting run over by a chick who can't drive worth a damn. ;)

I actually own a movie kinda like what you're talking about... BUT ... She doesn't just hit him... She didn't know she hit anyone and drives all the way home to find him stuck to the end of her jeep by accident... But he's not dead as she thinks at first... The movie I'm talking about is called Hit And Run. The guy "comes back" to be a pure terror on her and everyone else. She never even has the chance to burry him for an eree come back. Kinda interesting actually... Makes me want to watch it again.

Have to admit - for a bit there I thought you were thinking of the Mena Suvari/Stephen Rea "Stuck". And can I just go a little OT here - Directed by Stuart Gordon - and whats a Stuart Gordon movie without Carolyn Purdy-Gordon amongst the first 5 to 8 cast members?....lol Shame no Jeffrey Combs tho.............................
